Camp Oven Apricot Chicken

This is one easy meal to make that eveyone will enjoy. It is cooked in our camp oven over the coals, which gives it a very good flavour and it is so cheap to make. This is one of our go to meals for camping. 

Ingredients:

2 cans of apricot nectar 

1 packet of friench onion soup mix

12 chicken legs

4 carrots

2 cups of peas

oil

salt and pepper

Serve with:

Rice

Serves 4

Place all of the chicken legs in the camp oven, lightly coat in oil and season with salt and pepper. Place on coals until they are cooked all the way through.





Cut up the carrot into slices, place to the side. 

In a bowl mix the two cans of apricot nectar and french onion soup mix, place to the side.

Once the chicken is cooked take off the coals, pull of the meat off the bones and put chicken pieces back in the camp oven. *This is a step that can be skipped, I prefer to take the bones out but some people prefer to leave them in.

Add peas, carrot and apricot nectar to the chicken, stir to mix everything together.




Place camp oven back onto the coals, leave there until it has heated and thickened (about 30 min, but depends on how hot your coals are) 

serve with cooked rice




The carrot and peas can be swapped out for any vegetables that you have on hand, and you can also add apricot pieces (canned or fresh)  when you add the vegetables. It can also be cooked on the stove if you have a pre cooked chicken, or want to pan fry some chicken.
