Camp oven nachos

This is one of our favourite camping recipe, and it is so easy to make. It is cooked in our camp oven over the stove and then on the coals without the nacho chips getting soggy at all. Every time we have served this it is enjoyed by everyone! 


Ingredients:


1/2 capsicum

1 tomato

500g beef mince

2 packets taco seasoning 

1 can of kidney or broad beens

1 packet corn chips

grated cheese

Serve with:

lettuce

sour cream

sweet chilly sauce

avocado


Serves 4


- Dice up the tomato and capsicum, place in the bottom of the camp fire oven and let heat through on a stove top. Add mince and cook through.

- Add whole can of beans (including liquid), heat mix through. Add packets of taco seasoning and stir through. Let this mix simmer for 5 minutes.

- Take off stove and add some cheese to the top of the mince mix. Add the packet of corn chips and then more cheese on top.

- Place on lid and cook on coals for about 30 minutes or until the cheese has melted and the corn chips are hot. 

- Serve with sour cream, lettuce, avocado and sweet chilly

You can really easilisy change this recipie to suite your own tastes. Subistute the beef mince for shreaded chicken, add mushrooms or take out the vegtables all together. We love to add topping on ours, i think it really makes it and you can really add almost anuthing ontop for whatever flovour you are ooking for. More ideas included chopped up chilly, add corn on top or in with the mince, diced up tomato or olives. your imagination can go crazy with a recipie like this.
